Sift the flour, add the yeast and mix with a spoon or an egg beater.
Add the water and flour. Mix well for a couple of minutes until combined. Cover the bowl with cling film and let the mixture rest for about 30 minutes.
Heat the extra virgin olive oil in the pan. Once hot, drop a few tbsp’s of the mixture into the pan, leaving some space between them so the pancakes don't stick together. Turn the pancakes on the other side as soon as they are golden brown.
Once browned on both sides, remove the pancakes from the pan and place them on kitchen paper to absorb the extra olive oil.
Serve the pancaked with Rich And Raw Greek honey (your preferred flavour) and cinnamon!
